Do you love fajitas but are on the restriction phase of the low FODMAP diet?

Ingredients (Serves 2)
1 yellow pepper
1 red pepper
2 chicken/turkey breasts (cut into 3cm chunks)
1 tablespoon of garlic infused oil
2 carrots – cut length ways with a grater
Fajita Mix (Serves 2)
1 tablespoon of cornstarch
2 teaspoons of chilli powder (hot or mild – you can tailor this to your tolerance/preference)
1 teaspoon of paprika
1 teaspoon of white sugar
1/4 teaspoon of asafoetida
1/4 teaspoon of cayenne pepper
1/2 teaspoon of ground cumin
Method
- Coat the pan in the oil and then add the chicken/turkey – fry for 1 minute trying to get all meat sides white
- Add all the vegetables and stir on a high heat for another 3-4 minutes
- Add the fajita mix – sprinkle evenly
- Continue to cook until the meat has cooked through
- Serve with a wheat free wrap
