Low FODMAP lunch ideas can be difficult to continue to create, so check out these low FODMAP rice paper rolls.
Not being able to eat bread, only makes you realise just how much you relied on it.
This recipe is based around traditional asian food – ensuring FODMAPs are kept at bay.
Recipe (Feeds 1) For The Low FODMAP Rice Paper Rolls
- 3 Rice Papers
- 1 tin of tuna
- 1/4 avocado
- 1/2 pepper sliced
- Cucumber slices
- 1 tablespoon of mayonnaise
Method:
1. Prepare all your veggies.
2. Lay a rice paper inside a wet tea towel to moisten.3. When the rice paper is soft – add in the ingredients.
4. Wrap up (see video below for the method!).
Kirsten Jackson is a UK registered Consultant Gastroenterology Dietitian and founder of The Food Treatment Clinic. She has undergone many qualifications to get where she is today, including a UK BSc Honours Degree in Dietetics and Post-Graduate Certificate in Advanced Dietetics. In addition to this, she has FODMAP Training from Kings College London University. Kirsten set up The Food Treatment Clinic in 2015 after first experiencing digestive problems herself. She felt that the NHS was unable to provide the support individuals needed and went on to specialise in this area before opening a bespoke IBS service.
